I can't say that I'm a big fan of spiced cookies or cakes, but I think my 12 yo ate most of the cake herself (without frosting or powdered sugar)! The 3 yo liked it too. I used freshly milled whole wheat, honey, oil for the shortening, and Egg Beaters. I was worried that it would be too liquidy, but it baked up perfect at 40 minutes! I skipped the mixer and just mixed by hand and it was fine. Also cut down on spices as my apple butter was spicy enough. Left out raisins and nuts so that my kids would eat it. Well, they ate it!!
