ingredients
- 1 1⁄2 cups quick oats
- 1 1⁄2 cups low-fat milk
- 1⁄4 cup orange juice, plus
- 2 tablespoons orange juice
- 1⁄2 cup raisins
- 1⁄4 cup chopped dried apricot
- 1⁄4 cup dried cranberries
- 2 tablespoons sliced almonds
- 2 tablespoons unsweetened coconut
- 2 tablespoons honey
- 1 tablespoon sunflower seeds
- 1⁄4 teaspoon ground cinnamon
- 1⁄8 teaspoon ground ginger
directions
- Combine all ingredients in large bowl and stir to mix.
- Cover and refrigerate 8 hours or overnight.

Very nice flavor and an easy way to have breakfast ready and waiting in the morning. I think next time I will either decrease the milk to 1 cup or perhaps try subbing in some thick yogurt (like Greek style), as it was kind of watery. I'll probably add a bit of ground flax and wheat germ, too. But this is great and I know I'll be making it again; it would make a nice cool mid-day snack in the summer, too. Thanks for posting!
