Directions

  1. Peel and grate the broccoli stems.
  2. Shred the cheese.
  3. Heat the oil in a large frying pan over medium heat.
  4. Add the grated broccoli stems and 3/4 tsp salt and toss to coat.
  5. Cover, reduce heat and cook, stirring occasionally, until tender, about 10-15 minutes.
  6. Stir in the red-pepper flakes and cook 1 minute.
  7. Stir in the parmesan and serve.
