- 1 1⁄4 cups uncooked rosamarina pasta (orzo, 8 ounces)
- 2 cups thinly sliced cucumbers
- 1⁄2 cup chopped red onion
- 1⁄2 cup Italian dressing
- 1 medium tomatoes, chopped (3/4 cup)
- 15 ounces canned garbanzo beans, rinsed and drained
- 4 ounces canned sliced ripe olives, drained
- 1⁄2 cup crumbled feta cheese (2 ounces)
directions
- Cook and drain pasta as directed on package.
- Rinse with cold water; drain.
- Mix pasta and remaining ingredients except cheese in glass or plastic
- bowl.
- Cover and refrigerate at least 1 hour to blend flavors but no longer
- than 24 hours.
- Top salad with cheese.
- SUBSTITUTION: For a more intense flavor, substitute 1 cup sliced, pitted
- Kalamata olives for the sliced ripe olives.
