Dressing Ingredients
- 1 tablespoon olive oil
- 1 tablespoon red wine vinegar
- 1 tablespoon lemon juice
- 1⁄2 teaspoon dried oregano
- 1 garlic clove, minced
- 1⁄2 teaspoon honey
- salt & freshly ground black pepper, to taste (optional)

Salad Ingredients
- 1 head romaine lettuce, torn
- 1 tomatoes, quartered
- 4 pepperoncini peppers
- 1 small cucumber, sliced
- 1⁄2 cup crumbled feta cheese
- 3 sprigs fresh dill, chopped
- 1⁄2 green bell pepper, sliced into rings
- 8 kalamata olives
directions
- Combine all dressing ingredients except salt and pepper.
- Mix well.
- Season to taste with salt and pepper if desired; let stand 5 minutes.
- Combine all salad ingredients in large bowl; toss with dressing.

This is definitely a keeper. The only reason I gave it 4 stars instead of 5 is that IMHO the amounts are off. For 2 people, 1/2 head of romaine is plenty. This recipe made TONS of salad, so I tripled the ingredients for the dressing and it worked out perfectly. What a wonderful change from regular garden or caesar salad. Thanks for posting!
