  • Steam beans in large pot of boiling water - 4 - 5 minutes or still crunchy but cooked.
  • Run under cold water to prevent overcooking.
  • Rehydrate and drain sundried tomatoes.
  • In a salad bowl, combine balsamic vinegar, salt and pepper.
  • Add green beans, scallions, olives, capers and sundried tomatoes.
  • Mix well.
  • Sprinkle with parmesan cheese.
  • Serve cold or at room temperature.
