- 3 cups green beans, ends trimmed
- 1 1⁄2 ounces sliced black olives
- 1⁄8 cup balsamic vinegar
- 1 scallion, chopped
- 2 tablespoons capers
- 1⁄8 cup grated parmesan cheese
- 1⁄8 sun-dried tomato, rehydrated
- 1 dash sea salt
- 1 dash fresh ground pepper
directions
- Steam beans in large pot of boiling water - 4 - 5 minutes or still crunchy but cooked.
- Run under cold water to prevent overcooking.
- Rehydrate and drain sundried tomatoes.
- In a salad bowl, combine balsamic vinegar, salt and pepper.
- Add green beans, scallions, olives, capers and sundried tomatoes.
- Mix well.
- Sprinkle with parmesan cheese.
- Serve cold or at room temperature.
