Green Beans and Potatoes

- 2 lbs fresh green beans
- 6 -8 medium size new potatoes
- 8 slices bacon
- salt and pepper
directions
- Wash beans thoroughly. Snap off ends and remove strings.
- Break into 2 inch pieces.
- Peel potatoes and cut in half.
- In a large pot fry bacon, just until it starts to brown.
- Add the beans and potatoes.
- Cover with water. Bring to a boil.
- Reduce heat and simmer on medium for about 1 hour.
- Salt and pepper to taste.
- ****I also threw some onions in the pot as well. The onions added a little more flavor.

My this is GOOD!!!! Don't believe the "15 minute prep time" wishful thinking, though! It took me over an hour both times I've made it. The big time user was snapping the beans. I don't remove the pointy end unless something is wrong with it, which is rare with young beans. I don't believe in boiling food in general, and steamed everything in a big pot after frying the cut up bacon separately first. The veggies were layered in the pot with a steamer basket and lots of water (up to the bottom of the basket - you don't want the water to boil away and ruin your masterpiece); potatoes went in first, beans last. I started with only potatoes in the pot and steamed them for 10 minutes. Then I added the onions and beans and steamed the works for an additional 15 minutes. Finally I transferred all to a large mixing bowl, dumped the fried bacon bits on top, with several tablespoons of bacon drippings. After tossing it all together and tasting, I added a couple pinches of sea salt and ten grinds of black pepper. It sure hit the spot! All the veggies came from the Athens, TX Farmers Market, grown by local farmers using organic methods. ENJOY!!
