Green Chile Frittata

"from SF a La carte '79 edition, Bill Mann got us hooked on this years ago. I've made this with part pepper Jack sometimes. Delicious! I also sometimes serve salsa (Pace or similar) either warmed or room temp as a "sauce". (serves 8 as luncheon, breakfast dish, 12 as hors d'oeuvres.)"

  • Preheat oven to 350°.
  • Butter 9x13 shallow baking dish.
  • Mix flour and baking powder.
  • Add eggs and butter, blending well.
  • Blend in remaining ingredients.
  • Pour mixture in the prepared baking dish and bake for 35 to 45 minutes, or until set.
  • Cut into squares and serve very hot.
