Green Tomatoes with Indian Spices

"Serve this as part of an Indian dinner or as a vegetarian main course with rice. It is not easy to buy green tomatoes here, I have once tried to make this with red tomatoes, don't bother it will turn into a pulp, you want the tomatoes still in a chunky state when cooked. To my taste buds this is hot and spicy, adjust the heat to your own preference"

  • Wash and quarter the tomatoes, if they are very large, halve the quarters again.
  • Heat the oil in a wok or large frying pan; add the fenugreek and cumin seeds.
  • When they start to crackle add the tomatoes and green chilies, fry this for 2 minutes.
  • Add everything else except the garlic, stir, cover and cook for approx 6 minutes.
  • Uncover, add the garlic, turn up the heat and stir fry for 2/3 minutes, you will see that the oil which was separating first will now blend and make it more saucy together with the juices from the tomatoes.

  1. I wish I could thank Pets's R'us for her wonderful recipe, but she passed away on 7/14/11, so sad. This recipe is delicious, I love green tomatoes and have trouble finding them commercially in the area where I live, but we visited a friend who had a ginormous vegetable garden full of green tomatoes that he did not want and I went home with at least 5 pounds. The recipe is easy to make and full of wonderful flavors, rich with spices and garlic, yum. A true keeper, whenever I can find some green tomatoes.
     
  2. I love green tomatoes. This was excellent. I used cumin powder instead of cumin seeds the second time I made this cause the seeds burn & are bitter. This was excellent wrapped in rotis (Indian Flat Bread).
     
  3. I was less than thrilled with the flavor, though it smelled terrific. I think perhaps the fenugreek seeds were overcooked and bitter, but I do not know what they normally taste like.<br/><br/>I ended up adding potatoes to make the portions larger and a quarter cup of coconut milk to <br/>counteract the bitterness. I also used less oil, and cooked the tomatoes longer to soften to about cooked potato texture.<br/>I will try this one again, but be much more careful with the fenugreek!
     
  4. This was very nice, and I'll definitely make it again. I found it to be too bitter when I first tasted it, but adding sugar and cooking the tomatoes down more helped. I reduced the oil to 3 tbsp. and will probably cut back to 2 tbsp. next time. Thanks!
     
  5. Excellent! I found this recipe solely to use up some of my many green tomatoes, but I'll definitely be making it again. I agree that it's forgiving - I skipped the chili peppers, substituted .5 tspn cayenne for the chili powder, and used extra cumin instead of fenugreek. Yum!

  3. This was a tasty & different way to use the green tomatoes from our garden at the end of the season. Some items aren't available here - so (as recommended by the recipe poster) I substituted cumin for the fenugreek seeds & 1/4 cup fresh chopped mango for the mango powder. Thanx PetsRus!!

Hello, my name is Bonnie and I am a very beautiful cat as you can see if you look at the picture at the top of this page.... What??.. I am supposed to talk about you??? But it says here: About Me!! Well all right then ...... My mom is Dutch and has moved to England in October 2007, after living 15 years in the Netherlands with my English dad. They don’t have any human children and “created” their own family, which means I have to share them with Hannah, she is a 6 years old tortie cat, Abby the dog, she is a 9 year old Beagle, and a one year old black Miniature Pincher named Poppy, I refuse to tell you my age but I am a georgious lilac British Shorthair cat!! It is obvious she adores pets just by looking at her name she uses on Zaar (many on Zaar call her Pets or Petsie Poo), her name in real life is Annelies and that is a common Dutch name. My mom always liked to cook, but since she joined Zaar it got out of control, and it doesn’t help that she is disorganized. Printed recipes everywhere in the house, the recipe binders have got bigger and just between you and me, her hips too!!! I have lived in Holland all of my life until now, but they lived in several different countries/places:- desert and coastal Oman, up North and West in Holland, Vancouver-Canada, Aberdeen- Scotland and in Norway they lived in Bergen and Oslo. We have all moved together to England, as you can see I’ve already learnt the language! I heard her say to Dad that this is the last time she moved to another country...she's had it with moving from one place to another! ( its her age...she's getting grumpy) Mom is 55 years old but I always hear her say that the date of her birthday does not mean that much to her, the date of her cancer anniversary is more important, because so far she is a survivor. Besides cooking she has other interests too, crafts, gardening and soap making. She likes Zaar and is one of the hosts on the German-Benelux Forum here on RecipeZaar.
