Grilled Chicken Breast w/Rosemary and Thyme

"I came across this most juicy chicken breast recipie while on EDIETS.com. My DH just loves it. I make it at least once a week and always when I have guests in town. It is the easiest & tastiest recipe to make. Bonus, clean up is a piece of cake! (prep time includes 30 minutes marinating in refrigerator). Serve with steamed veggies or salad, and rice or mashed potatoes for a complete dinner."

  • Preheat either grill or broiler.
  • Combine olive oil and spices in a flat dish.
  • Add chicken and coat both sides.
  • Cover with plastic wrap and marinate in the fridge for 30 minutes.
  • Grill or Broil chicken for 5-7 minutes, then turn and baste with remaining marinade.
  • Cook an additional 5-7 minutes or until inside is no longer pink.
  • Serve.
  • Throw away any leftover marinade.

  1. This recipe was easy, but I think it needs to marinate for a little longer than 30 minutes, because the flavor really didn't come through. I'll make it again, but next time, I'll double the time and amount of marinade. To cook the meat faster, I pounded it to about 1/4" with a meat mallet.
     
  2. These are very good...I used fresh garlic and marinated longer, about 4 hours. Then grilled. Very moist and tender. Spices are perfect.Thanks for posting.....Gina :)
     
  3. This was very savory. I took the advice of others and doubled it and marinated for about 2 hours. It came out with a nice crust ye t moist. I recommend serving with grilled tomatoes or something like that to off-set the very savory flavors here. Thanks for posting!
     
  4. I'm doing the low sodium thing and the flavors in this were great and the chicken got good and blackened on the grill. I did have to throw it in a 350 oven for 20 minutes after grilling as the breasts were thick, but they came our very moist and tender. This is a keeper, thanks for posting!

  1. Definitely a hit with us! I used Herbs de Provence as it has those herbs already in it and used white pepper instead. First time I went back for more chicken instead of beef! My husband basted the chicken with butter while he was grilling it. Yummy! Thanks!
