  • Preheat grill, broiler or grill pan.
  • Season both sides of chicken with salt and pepper.
  • Cook 5 minutes a side, or until done.
  • Meanwhile, puree cheese, mustard, oil, worcestershire sauce, garlic and 1/4 cup broth in blender until smooth.
  • Add remamining broth (and 1/2 tsp anchovy paste. If desired); puree.
  • In a large bowl, toss romaine lettuce with dressing.
  • Divide among 4 plates.
  • Thinly slice grilled chicken crosswise; arrange on romaine with tomatoes.
  • Each serving equals to 1 chicken breast sliced; 1-1/2 cups lettuce; 2 Tbsp dressing; 4 cherry tomatoes.

  1. This recipe left me wanting. The dressing is the key to flavoring this dish and it was too thin and didn't give the flavor boost I was hoping for. Sorry, but I don't think I'll be making this again.

  4. This was absolutely delicious. I doubled the dressing recipe and it was perfect. A definite keeper. I thank you and so does my waistline!
     
  5. This was a very tasty salad! I made it for 2 servings, so reduced the chicken broth to 3/4 cup. I wouldn't want to dilute the dressing's other ingredients more than that, so if I were to make it for 4 servings I would double the amount of the other ingredients. I also marinated the chicken for about an hour in Italian dressing and that helped the chicken complement the salad.

Me and my boyfriend have been together for 11 years now. We live on 40 acres and have 6 dogs and 4 Tennessee Walkers. We both work a lot of hours so there is never enough time in a day to get everything done. I absolutely love the outdoors. I also enjoy lifting weights, reading and playing with all of my beautiful animals. I absolutely love, love and love to cook. I like to cook a variety of things and also like love to bake. I like to just get in the kitchen and experiment with different things. If something does not turn out for me such as pie crust or gravy I will keep trying until I can make it work. Only problem is, when I finally make it work it may not work again the time after that. It is fun though and I do consider myself a pretty good cook for the most part. I also love slow cooker recipes. Those are my most favorite in the winter months.
