Grilled Mexican Lime Chicken

"This is the marinade I use for the chicken in my chicken lime taquitos, but it is so wonderful plain, I thought I'd post it separately. You can use any chicken pieces you prefer. This is just wonderful!"

  • Combine first all ingredients for marinade.
  • Marinate chicken in mixture for at least 2 hours.
  • Drain chicken well and grill until done.

Questions & Replies

  1. Want to try this today,but there is no mention of temp. on grill eg: high,low medium, do you grill on cooler side of grill to prevent burning, etc. ?
     
  2. Could you cook this in the slow cooker? Any idea how long?

  1. Ok, this is so far the best marinated grilled chicken I've ever made! I only got about 3 hours marinating time and my chicken just sucked up so much flavor! It was tangy and delicious. Will be using this marinade for a long time :)

  4. So wonderful! Made this with 2 chicken breasts and halved the recipe. Marinated for just over 2 hours and it tasted so good. I think next time I will cut it up and eat as a taco/burrito.

Tweaks

  1. I substituted two finely-chopped cloves of fresh garlic for the garlic powder.
     
  2. I'm not a fan of chicken breast but this marinade made the chicken scrumptious! My favorite grilled chicken hands down.
     
  3. This was a lot milder than I'd expected. Next time I'll use real garlic instead of garlic powder. Also it would be a good idea to poke holes in the chicken so the marinade really gets in there.
