Ground Beef and Summer Squash Skillet

"I was given this family favorite recipe almost 40 years ago. It's easy to prepare, cooks fairly quickly and the flavors of the ground beef, squash, tomatoes, onions & rice are beautiful together! Serve it with a simple salad and cornbread and you have a meal! And you don't even have to brown the ground beef!"

  1. This was a good dish to use up a lot of zucchini and summer squash that I had on hand. It uses staple ingredients, was easy to make, and to my husband and I it tasted like comfort food. The flavors blend nicely, and the texture was similar to a stew. One skillet of this and you have a complete meal.

  2. Its summer time and the garden has lots of summer squash coming on this is great and the boys love it. I rate it A #1 great. thanks

  3. I prepared this several times using my moms canned tomatoes. I used a 1 quart jar just dumping the full jar in. instead of the sauce and diced tomatoes the recipe calls for. I really enjoy this recipe and it is a good way for my sons to eat veggies.

  4. I really love this recipe! It's really delicious, and a great way to use some of the squash in my garden. I accidentally put in a large can of tomatoes so I added some already cooked rice to soak up that extra liquid. Thanks for the great recipe!!!!!

  5. Good recipe, but made some edits to spice it up. Added diced bell pepper and Serrano chile. Also used cup of red wine instead of water for a flavor meld.

  1. I threw in some fresh green beans I needed to use. I also accidentally used a large can of diced tomatoes so I used some leftover already cooked rice to soak up the extra liquid.
