Ground Beef & Cabbage Stew

"One day I made this stew for myself (God forbid the kids ever put cabbage in their mouths)They(the kids) accidently ate it mistaking it for my beef stew. They called me on my cell phone and told me that was the best stew I had ever made. I just let it be my little secret about cabbage."

directions

  • Brown ground beef and drain;set aside.
  • Heat olive oil in skillet and add onion and cook 2-3 minutes.
  • add cabbage, tomatoes, potatoes, carrots, bell pepper, thyme.
  • Mix well.
  • add broth.
  • Heat to boiling; reduce heat.
  • cover and cook 20 minutes.
  • stir in corn and beans.
  • cover and cook 15 minutes.

  1. Yummy! It could be spicier than the spicy option, but this pulled together very nicely and tasted great. And it didn't have the cabbage-y smell, even left over, to dissuade anyone else. Almost every recipe I find online, I need to double the veggies (or halve the meat) at least once to get it the way I like it, but not this one!
     
  2. We used a bag of frozen baby veggies, and added a can of chicken broth. This was so good! I can't wait ofr the leftovers tomorrow.
     
  3. AWESOME RECIPE!!! Only recipe change was to use one can of beef broth and I too added an extra quart (4 cups) water. This is so homey and good! Thanks so much for sharing your recipe :-)
     
  4. This was so good! I shredded the cabbage very fine, added two cloves of garlic,fresh ground pepper, bag of frozen mixed veggies in stead of fresh,skipped the peppers.
     
  5. Great tasting hearty stew! I added a tablespoon of Creole seasoning after reading the other reviews and that just made the stew. I used beef broth and followed the recipe to the letter, except for the seasoing. We will have this again. Thanks, Carole in Orlando

Tweaks

  1. I was wary of the recipe but needed to use my ground beef and had all the ingredients for this. I used jalapenos instead of green pepper but just 2. Gave it a nice kick but not too much. Didn't have thyme. Husband loved it. Oh and I used a full pound of ground beef..why not? I needed about twice the liquid it called for if not more...to cook the potatoes...then I let it cook out with the lid off. Will add this to rotation..easy, filling, and healthy!
     
  2. Great stuff. Used peas instead of green beans and white potatoes instead of red. Skipped green pepper, too -- not a fave in my house. Used sausage-seasoned ground beef. A winner!
     
  3. I made this in the crockpot (after browning meat and onions separately) - took a bit over 4 hours on high. I used beef broth and substituted sweet italian sausage and fennel instead of beef and thyme. Left out green beans. The red-meat eater in my house said "this tastes great, I can't believe it's good for you too!" ;)
