Ground Beef Pie

"This is an easy dish to prepare for lunch or as a mainstream for dinner. It does not need to use oven and it is delicious. This recipe is considered one of the typical food in Peru where its name is "Covered Rice". One tip for the preparation is to cook the rice well done, this means to use a little bit more water than the directions for the rice. Before to make the pie you have to spray the pan you will use to make this pie."

  • Prepare the rice using 1/2 cup more of water. When ready set aside.
  • In a fryer pan mix oil, onion, garlic, salt and pepper in a medium heat until the onion is tender.
  • Add tomatoes and tomato paste and keep in medium heat for about 7 minutes.
  • At this point add the groundbeef and fry it well. If the mix is too dry add some water and let it boil.
  • Add the raisins and cook for 3 more minutes.
  • Use a 9 x 9 inch pan to make the pie spraying oil before to press the first layer of rice.
  • Spread the groundbeef mixture over the rice and cover with another layer of rice pressing firmly.
  • For garnish spread grated boiled egg and parsley (optional).
