- 4 slices sourdough bread
- 2 ounces gruere cheese, grated
- 2 ounces sharp cheddar cheese, grated
- 2 scallions, thinly sliced
- sea salt
- fresh ground black pepper
- vegetable oil, for sauteing and brushing
directions
- Preheat a Panini grill.
- Lay the slices of bread out.
- Divide the cheeses between the two sandwiches, add the scallions, and season with salt and pepper.
- Put the tops on.
- Brush both sides of the Panini with a little oil and grill in the preheated Panini grill for 2-3 minutes or according to the manufacturer’s instructions.
- The bread should be golden brown and the filling warmed through.
- Serve with a dollop of grainy mustard on the side for dipping.
