  • 2 cups yellow split peas
  • 1 quart chicken stock
  • 1 teaspoon salt
  • 1 lb bacon, chopped
  • 1 stalk celery, chopped
  • 3 medium leeks, chopped
  • 3 medium carrots, chopped
  • 3 medium potatoes, chopped
  • 1 large onion, chopped
  • 1 lb Canadian bacon, chopped
  • 4 ounces vienna sausages, chopped (optional)
  • salt and pepper, to taste

directions

  • Combine all ingredients and simmer for 1 hour.
  • Serve.

  1. Wow! I wish it was cold right now, because I can't think of a better soup to warm me up in the winter....even in 96 degree weather, this soup is delicious. This is easy to make and really doesn't take very long. I halved the recipe, but ended up having to add more stock. I used the yellow split peas, and also used gold yukon potatoes to increase the yellow color. Very satisfying and delicious soup! Thanks for sharing.
