- 20 ounces halibut fillets
- 1⁄2 cup cottage cheese
- 3 ounces kalamata olives, pitted
- 1 clove garlic, finely chopped
- 1 ounce arugula (a handful)
- 1⁄4 teaspoon ground black pepper
- 1⁄4 small onion, finely chopped
- 1 tablespoon olive oil
- 1⁄2 cup dry white wine
- salt
- 4 slices lemons
directions
- Coarsely chop the olive and the arugula. Combine the cottage cheese, arugula, garlic, and pepper. Mix well and adjust the seasoning with salt. Cover the fish fillets with a layer of the mixture.
- Preheat broiler.
- Heat a heavy ovenproof skillet over low-medium heat. Add olive oil and chopped onions. Cook until the onions are soft, but not browned. Add wine and bring to a boil.
- Place fish fillets in the pan. Place under broiler for 7-10 minutes.
- Remove fillets from pan, sprinkle with a bit of the cooking liquid, garnish with lemon slices, and serve!
