  • Melt butter in a heavy saucepan, sauté onion and celery over medium heat for 5 minutes.
  • Add the flour and stir until incorporated.
  • Slowly add the milk stirring constantly until smooth and thickened, add more milk if the sauce becomes too thick.
  • Add remaining ingredients and cook over low heat, stirring frequently until heated through.

  1. We liked this recipe. I decreased the peas, and added asparagus tips. Also added about a cup of sautéed Baby Bellas and two hard boiled eggs. This is the way my mom made (either) Chicken/Ham Ala King. I omitted the Piementos and celery, and added a rounded TLB of coarse mustard. Mustard and Ham go together well. We felt it gave it just a little kick, that perhaps some folks are stating it misses.
     
  2. I have always served this over mashed potatoes. It's a nice way to make instant potatoes (If you don't have leftovers of the real thing on hand) a little more "special." It is a very comforting and tasty dish. I have even made a "prep ahead cassarole" version to take as a meal to a friend. To do this I made the potatoes and lined the bottom of a 9 by 13 dish with them, and then made the sauce and poured it on top of the potatoes. It warms up in a cassarole dish in about 20-30 minutes at 350.
     
  3. I diced an entire onion, two stalks of celery, subbed a 14 oz. can chicken broth for the milk (added about a quarter cup of milk as well), increased the worcestershire sauce to 1 tsp. and left out the pimientos...everyone loved it!
     
  4. I found it too bland as is but I didn't put in the pimientos so maybe that was it? I added at least a tsp more worcestershire and some salt until I was happy with the flavor. I thought capers might make an interesting addition to replace the pimientos but I'm not sure...
     
  5. What an easy and tasty dinner! I served it over texas toast. This was so easy I even made a seperate 1/2 batch w/o onions and celery for my picky 10 yr old daughter. She loved it! Thank you!!
