  • Preheat oven to 400°.
  • On a lightly floured surface, roll the pastry into an 11 inch square.
  • Using a 1 ½ inch pastry cutter, stamp out 42 rounds.
  • Place rounds on a baking sheet and bake until puffed and golden, 18-20 minutes; let cool until ready to serve.
  • Meanwhile, in a bowl, mix the creme fraiche with the mustard, honey, lemon juice, Worcestershire, salt, and cayenne; chill a few minutes to thicken and blend flavors.
  • To assemble biscuits—split each pastry in half, spoon or pipe a dollop of the honey-mustard creme fraiche on the base; arrange some ham on the cream, and put on the top.
  • Serve immediately.
