"Creamy ham chowder. Perfect for winter nights and quick dinners. This is another of my mother's Geraldine Lefever recipes she used while we were growing up. Our children have loved it too!"

ingredients

  • 1 cup thinly-sliced onion
  • 2 tablespoons butter
  • 1 cup diced cooked potato
  • 2 cups cooked corn, drained (15 oz. can)
  • 1 cup diced cooked ham (can be 1/2 lb.deli ham chunk)
  • 1 (10 1/4 ounce) can cream of mushroom soup
  • 2 12 cups milk
  • salt and pepper

directions

  • Cook onion in butter til soft, not brown.
  • Combine with all else, and heat.
  • Serve.

  1. This is great. I added a handful of chopped green peppers and some fresh mushrooms with the onions. Also, after I started making this I discovered that there wasn't any milk, so I used frozen creamed corn instead of regular corn for creaminess and then added some of the water from cooking the potatos. This is a wonderful dish and I have now made it twice this week to use up leftover ham.
     
  2. This was very excellent, my family loved it. I have already gave this recipe to a friend. It is fast and easy to make, short cooking time and makes a great meal if you are in a hurry, I added celery very thinly chopped and a cooked 2 carrot diced with the potato, to add color and taste to the dish. I used red potato keeptthe skin.
     
  3. This is a wonderful so easy recipe to make, it was absolutly delicious. My husband raved about it, and how good it would taste with shrimp or chicken also. If you love chowder, you won't be disappointed !

  1. We love this soup!! Thank you for posting. I, too, didn't use milk and just used the water that the potatoes cooked in, for the desired nutrients. It was still very creamy. I added all the other ingredients to the potato pot, throwing in some extra veggies as well (diced green bell pepper and frozen peas). Like some of the other reviewers, I also used creamed corn instead of regular, fat-free instead of regular mushroom soup, EVOO instead of butter, and some low fat shredded cheese to top it. I added a little cayenne pepper for kick too. This soup was a big hit! I'm sure I'll be making this over and over again. :)
     
  2. This was a wonderfully quick & tasty chowder. My husband really enjoys chowders, but he likes them chalked full, so I doubled the ham & the potatoes, while leaving the other ingredients the same. We really enjoyed this. I did make some minor changes, similar to the ones others have made. I decided to try cream of asparagus soup instead. I also only had cream corn, so I used that. I then only used 2 cups of milk. This is truely a versitile recipe.
     
  3. Excellent! Instead of the cooked potatoes, I used 3/4 cup of instant potato flakes. I like my chowders thicker, and this made it nicely thick. I also used 2 cups of ham because I am a 250lb meat eater. The amount of pepper I used was 1/2 teaspoon. My wife thought it was a little too hot, but I thought it was just right. Thanks for the keeper.

Hi. My name is Ann. I live in a little town in South Jersey. I live in our home with my dear husband,Dave, our oldest daughter Susann and her two boys, Joseph and Zachary. Also our oldest son, David(Jr), and his two daughters, Jamie and Kayla on the weekends.And our youngest son, Seth is living here with us also, with his three dear cats.
