Ham, Noodle and Swiss Cheese Casserole

"Trying to use up Easter Ham I threw this together using what I had in the pantry and fridge! Amounts are approximate, feel free to add more or less of any ingredient! Edited to change the size bag of noodles. I think it was an 8 ounce bag not 16 ounce!"

  • Preheat oven to 325 degrees.
  • Prepare egg noodles in a large Dutch oven, boiling as described on package. Drain and return to the Dutch oven.
  • While the noodles are boiling, melt butter in skillet over medium to medium high heat. Stir in flour until thickened a bit. Slowly add half and half and chicken broth, stirring to prevent lumps. Cut heat up a bit if needed. Slowly add Swiss cheese, dry mustard and salt and pepper, stirring constantly.
  • When the sauce is medium thickness, cut heat down to low.
  • In the large Dutch oven containing the drained noodles, add the frozen peas, ham and the sauce. Mix well and pour into rectangular baking dish approximately 9 by 13.
  • Cover with French Fried onions.
  • Bake for 20 minutes.

  1. Very good. Followed recipe pretty closely but baked at 325° for 20 minutes and then added the French fried onions and baked for another 5 minutes. The French fried onions really add some pop to this recipe which would be somewhat bland without them. I think this recipe serves 4-6 adults not many more.
     
  2. Love this recipe! The use of chicken broth gives the cheese sauce a less "bulky" consistency. I doubled this recipe and used cut up steamed broccoli crowns instead of the peas. I also used a combination of half and half and 1% milk to cut down on calories. I had enough for two casseroles, one which I brought to a sick friend and her family loved it! Don't usually like processed foods, but those onion rings on top put this recipe over the top!
     
  3. I was looking for a recipe to use up some of my leftover ham and came across this recipe and it looked interesting. I was going to cut the recipe in half since we were only two but changed my mind. Figured leftovers could be frozen for another lunch or two. The only thing I changed was I added a handful of broccoli, I put it in the same pot of the noodles when they were almost cooked. I prepared it in the morning before going to work and then just popped it in the oven at work. Cooked it for the 20 minutes but I think it is better to put the fried onions after it comes out of the oven. Only cause in the 20 minutes I found they overcooked the fried onions. As well I would really prefer more sauce, just didn't find it saucy enough when it came out of the oven. But it definitely has a delicious flavor, the Swiss cheese was very nice and creamy tasting. Will be making this one again with a bit of extra sauce the next time. So, thanks for sharing a great recipe carolinajewel... it was a great yummy way of getting leftover ham gone.
     
  4. I made this after Easter when we had tons of leftover ham. I then froze it and defrosted it yesterday, added the onions and baked. DELICIOUS!!! Will definitely make again. Thanks!
     
  5. This was really good and easy to make. I used leftover lunchmeat ham, canned peas and fat free half and half but followed the rest of the recipe as written other then I didn't add the french fried onions, as my kids don't like them. This was a nice, easy weeknight meal.
