Hamburgers with Brown Gravy (TOTAL Comfort Food aka "Meat Cakes" :)

"These are sooooo great (and EZ)! I grew up eating these about once a week and they are incredible with mashed potatoes or buttered egg noodles and a veggie. While this recipe is basically my mom's, I have changed one thing...instead of using chopped onion in the burgers, I use an envelope of onion soup mix...it gives them the PERFECT flavor! This is now one of my family's favorite meals...try it and it will probably become one of your's, too. P.S. These burgers also work for grilling (without the gravy :)."

  • 2 lbs ground beef
  • 6 pieces bread, broken into small bits (potato bread works great, but I usually use white bread)
  • 1 envelope onion soup mix, dry
  • to taste salt, to taste (because of the soup mix, you may not need it, although we still do)
  • 12 teaspoon pepper
  • 2 tablespoons ketchup
  • 12 teaspoon garlic powder
  • 2 teaspoons parsley flakes
  • 2 eggs
  • 2 envelopes brown gravy mix
  • 2 cups water

directions

  • Combine ground beef, bread, soup mix, salt, pepper, ketchup, garlic powder, parsley and eggs in a large bowl until well mixed.
  • Prepare each burger with approx 1/3 cup of meat mixture and form into patties about 1/2 inch thick.
  • Heat a 12" skillet over med-high heat and fry burgers for about 5 minutes on each side, until they are almost done.
  • Remove burgers to a plate and discard all but about a tablespoon of drippings from skillet.
  • Lower heat under skillet and prepare brown gravy with water in a bowl or measuring cup; slowly pour into skillet, stirring constantly, scraping up any brown bits from the bottom.
  • When gravy has thickened, place burgers back in the pan and cover.
  • Simmer for about 20 minutes, or until burgers are done.
  • Serve with mashed potatoes or egg noodles.
  • YUMMY!

  1. Yum, yum, yum, yum, yum. And YUM! These were great! Super fast, super tasty. It was so good I actually had to bring it to work and let all my coworkers ooh and aah over it, which they did. I am trying to keep a more "frugal" kitchen, and this fits the bill! Inexpensive to prepare, and very easy. I used extra lean ground beef and served with egg noodles. Next time I'll try mashed potatoes. I might even try serving with homemade mac and cheese instead of noodles or potatoes. Now THAT would be a great comfort food meal. Thank you so much for sharing this recipe!
     
  2. The family was in the mood for meatloaf last night so I came to this site for help. With it being so hot outside, I didn't want to use my oven and this recipe was perfect! The family loved it! I made it with a side of mashed taters, a veggie combination of snow peas, green peas, carrots and broccoli, a salad and an oregano/garlic bread from my bread machine. Yummy!   3. This was a very tasty recipe.The flavour of the ingredients blended nicely together, the meat was moist and flavourful and the onion soup mix wasn't over-powering as in some recipes. My family thoroughly enjoyed these served with garlic mashed potatoes and peas and carrots.This one goes into my recipe files.
     
  4. This recipe is so easy, down-right delicious and cold-weather comforting. My husband would choose these with a side of mashed potatoes over a good steak dinner! Matter of fact, just hand him a straw and he might drink the gravy! Very pleasing to the tummy and outstanding on the wallet!

Tweaks

  1. just like mom used to make!! i only had 1.5 lbs of ground beef, but i used the same amounts of everything else. i used sun-dried tomato paste instead of the ketchup and i used about seasoned dry breadcrumbs instead of bread. i also caramelized some onions with garlic in the pan before frying the patties, then i added the onions into the gravy before returning the patties to the pan. also, i made the patties up a day ahead so everything came together pretty quickly for me. gotta love anything you can make ahead of time! served with mashed potatoes, leftover baked beans and a loaded salad! this is a total keeper, comforting dish. will make lots!! thanks karen!
     
  2. These were just OK for me. Very salty. I halved the recipe for my bf and I and followed it pretty much much word for word. Although, I substituted 1 tsp of minced garlic for the garlic powder and smothered them with sauteed onions and mushrooms. I may make these again but will definitely tweak them a bit. Overall...not bad.
     
  3. I cut the recipe in half using only a pound of ground beef. There is only the two of us. I omitted the salt in the recipe knowing that the half pkg of onion soup mix I would be using would be enough salt for our taste. The meat turned out juicy and tasty but still a bit salty for my taste. I will be making the recipe again, but will use fresh diced onion in place of the soup mix, and add salt to taste if needed. A plus to the recipe is that it indeed went together fast and was ready in no time. Great recipe for the days when you are pressed for time. Just remember to compensate for the salt in the soup mix if you are going to use it.
     
  4. Very nice. I would go for this recipe instead of meat loaf any day. I do need to try to get some of the saltiness out of it--maybe by not using the soup mix, or less of it, and going back to chopped onion? The soupmix was part of what made it so quick and easy though... Will make again--looking forward to the leftovers with pasta instead of mashed potatoes and creamed spinach tomorrow night!
