Harvest Chicken Linguine With Blush Sauce

- 1 (350 g) package linguine, cooked according ot package directions
- 2 tablespoons pure olive oil
- 1 cup chorizo sausage, dry-cured, finely diced
- 2 cups sweet potatoes, peeled and diced
- 1 (288 ml) package creamy tomato sauce (Blush)
- 1 rotisserie chicken, skin removed nad diced
- 1⁄4 cup dried and sweetened cranberries
- 1⁄4 cup pine nuts, toasted
directions
- Hear oil in a large skillet over medium heat. Sauté chorizo and sweet potato until caramelized, about 5 minutes. Add tomato sauce and bring to a gentle simmer. Stir in chicken and lightly heat through. Season to taste with salt and pepper.
- Divide cooked pasta between plates, spoon sauce over. Garnish with cranberries and pinenuts.
