  • Combine flour and milk.
  • Stir in egg yolk. Fold in sugar, hazelnuts and stiffly beaten egg white.
  • Add salt to taste.
  • Melt butter and fry omelet until golden brown on both sides.
  • Serve with stewed fruits or berries.

  1. This didn’t work well for me but I may have been the cause. I made the recipe as stated. It seemed much more like a pancake than an omelette. I measured the hazelnuts prior to grating. After grating there was a lot more than 2 Tbsp. Once everything was mixed I should have known better than to put all the batter in one pan. It was way too much. I think this may have worked if I had kept the portions smaller and made about 4 smaller portions. That being said, I did like the flavor of the mash that I ended up with (DH did not but he’s not a fan of hazlenuts) and will probably give this another try with grating the hazelnuts first then measuring 2 Tbsp. Thanks for sharing – tips would be welcome! Reviewed for ZWT6.
