  • Put the butter in a small, microwave-safe mixing bowl and heat in the microwave until just melted (about 45 seconds).
  • Add the sugar and sucralose to the melted butter and stir until well-combined.
  • Beat the egg with the vanilla and add to the butter-sugar mix. Stir until combined.
  • In a large mixing bowl, combine the flours, oats, baking soda and salt. Add the liquid mixture and mix well.
  • Fold in the chocolate chips.
  • Wrap the cookie dough in plastic and chill in the refrigerator for at least 30 minutes. (You can skip this step, but the cookies will be flatter.).
  • While the dough is chilling, preheat the oven to 350º F and lightly grease a cookie sheet or cover it with parchment.
  • Remove the dough from the refrigerator. Break off tablespoon-sized pieces, roll them into balls, and place them on the cookie sheet, leaving about 2 inches in-between.
  • Bake for 12-15 minutes, until cookies have just set up.
