- 1 medium onion, diced
- 1 red pepper, diced
- 1 jalapeno pepper, seeded, diced
- 2 medium zucchini, diced
- 2 garlic cloves, minced
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon oregano, dried
- 1⁄4 teaspoon cayenne pepper
- 1⁄8 teaspoon salt (to taste)
- 1⁄8 teaspoon pepper (to taste)
- 2 tablespoons parsley
- 1 1⁄2 lbs ground turkey or 1 1/2 lbs beef
- 28 ounces diced tomatoes
- 2 cups chicken broth
directions
- 1. Warm olive oil in a pot.
- 2. Cook onion, peppers, zucchini until softened.
- 3. Add garlic and seasonings.
- 4. Add turkey.
- 5. Add tomatoes, broth. Bring to a boil. Reduce heat. Simmer 30-40 min.
