- 3 tablespoons butter
- 1⁄3 cup light cream cheese, softened
- stevia, to taste
- 1⁄2 teaspoon vanilla
- 1 large egg
- 2 tablespoons water
- 1 cup flour
- 1⁄2 teaspoon baking powder
- salt, dash
directions
- Cream together butter, cream cheese, and stevia.
- Add egg and water, beating well.
- Sift together flour, baking powder and salt, and add to creamed mixture. Mix until thoroughly blended.
- Shape into a roll, 1 1/2 inches (3.75 cm) in diameter.
- Refrigerate at least 2 hours.
- Cut into thin slices and place on an ungreased cookie sheet.
- Bake at 350 degrees F (175 C) for 8 to 10 minutes.
