  • Sift together Flour, Baking powder, Baking Soda and Spices.
  • Add Sugar and Stir to combined.
  • Next add wet ingredients and any Fruit of your choice.
  • Pour Batter almost full into 18 Muffin Tins lined with cupcake papers.
  • Top with a sprinkle of light brown sugar mixed with some Cinnamon.
  • Preheat oven to 375* and bake for 35-45 minute.
  • Test with a toothpick to make sure they are done.
  • Oven Temperatures vary.
  • Let cool completely.
  • Serve with a Good cup of Coffee or a tall glass of Milk & Enjoy!

  1. Very nice, healthy muffin. I used chopped banana and raisins in mine. I only had to bake mine 22 minutes, so be careful and watch as you bake these.
     
  2. Since finding this recipe I have tried several different types of fruit. All came out excellant. I nice muffin with some great out comes for all the different seasons.
     
  3. I liked this recipe, but I made a few changes to meet my daughter's dietary needs. And the recipe makes 12-14 muffins, but not 18 unless you don't fill the muffin cups very much.

After I was born we moved back to Tennessee, Where my parents were born. I have remained here because of the beautiful Mountains! We bought a Home overlooking the mountains of Cumberland Gap Tn. I love to cook!!! Before I became disabled, I worked as a Caterer and as a Supervizing Manager in a Deli/Market for 15 years. It was my life. I miss it very much. I have learned alot about cooking and baking from my Grandmother's and my Aunt's.We do a lot of canning, things like Jellies and Apple butter, Chow Chow,Mixed pickles, Strawberry jam, Gr. Beans and Pickled Beats. And my favorite is the homemade Strawberry Jam. We have even had several Mollasses Stir Offs in the Fall at my Church & we make Apple Butter and Cider. I was raised in the Southeast and we love to COOK. It must be something in the water? LOL & If it involves cooking count me in!!! I Love the Food Network and all the cooking shows. I Have found alot of great recipes and made alot of friends from this Web site.
