Hellmann's Parmesan Crusted Chicken (Low-fat Version)

"This is an unbelievably simple recipe that tastes wonderful. The way I make this low-fat is by using Hellmann's "Just2Good" mayo instead of the regular.. unlike fat-free, I think it tastes JUST like light mayo and pretty close to the real thing. I also substitute low-fat Parmesan cheese, if possible. Enjoy!"

I also used a sprinkling of whole wheat panko instead of breadcrumbs so that there would be a good crunch. I'll certainly use this one again. Thanks

  5. Super juicy and golen crunchy. Absolutely scrumptious. The best eating ever...kick it up a notch with chili powder and a touch of garlic powder. Fresh peas and a baked potato are great complements??.

  1. I season both sides with parsley flakes, a little season salt and pinch of pepper, makes it so tasty!
     
  2. One batch I tweaked half of the chicken for my daughter by leaving off the breadcrumbs. It was just as delicious (if not better) but with a sharper cheese flavor.
