directions

• Preheat the oven to 400 degrees F.
• Using parchment paper, line a large baking sheet with shallow sides.
• Remove the leaves from the thyme and coarsely chop - you should have around 2 tablespoons.
• Place half in a small bowl.
• Stir in the butter, garlic and a pinch of salt and pepper.
• Evenly divide the mixture and stuff under the chicken skin.
• Sprinkle the chicken with salt and pepper and place on 1 side of the baking sheet.
• Bake in the centre of the oven for 10 minutes.
• Meanwhile, peel the potatoes and cut into large bite-size chunks.
• Place in a bowl and drizzle with olive oil, the sprinkle with salt, pepper and paprika.
• Toss until evenly coated.
• After 10 minutes, place on the baking sheet with the chicken and continue to bake, basting occasionally, for 25 minutes.
• During the last 5 minutes, scatter the tomatoes on the baking sheet.
• Serve, sprinkling the chicken with the remaining chopped thyme.

I live with my husband, four cats, and a sweet mutt named Jada in Scarborough, Ontario, where I work as an elementary school administrative assistant. I have a 31 year old daughter who lives with her boyfriend in nearby Don Mills, along with my sweet granddogs, Frankie and Turbo. I would have to say that my passion is animals, since I have so many of them!

If I had a month off work to do what I please, I would first catch up on my sleep and then just have fun - see a few movies and maybe take a couple of short trips - something that wouldn't break the bank - lol!
