- 2 lbs beef, 1-inch cubes
- 1 quart beef stock
- 2 teaspoons salt
- 2 tablespoons basil, dried
- 1 teaspoon black pepper
- 1 tablespoon hot sauce
- 28 ounces tomatoes, diced
- 1 onion, chopped
- 1 bell pepper, diced
- 2 stalks celery, chopped
- 2 carrots, med, chopped
- 3 potatoes, med, cubed
- 1 pint corn, kernel, frozen
- 1 cup okra, chopped
- 1 cup lima beans
- 1 cup green peas
directions
- Brown meat.
- Add stock and spice.
- (1 quart of water with bullion cubes or beef base may be substituted for stock).
- Adjust salt depending on saltiness of stock or bullion.
- Simmer 1 hour.
- Add vegetables.
- Cook till vegetables are done, approximately 30 - 45 minutes.
- Vegetables may be swapped, added, or removed according to taste.
