History Project Chicken Nuggets

"I called this "History Project Chicken Nuggets" because our 7th grader had needed shredded wheat for her project. She had used the shredded wheat for the roof of the project. On the back of the Kroger Brand Bite Size Shredded Wheat cereal box was this recipe. It looked good, easy, and something my family would really enjoy. There were no leftovers...Need I say more! Thank you, Kroger, for this family-friendly recipe!!!! YUM!!!"

  • Preheat oven to 400 F.
  • Combine crushed cereal, Parmesan cheese, seasoned salt, paprika, and garlic powder.
  • Mix together the mayonnaise, honey, and mustard.
  • Stir chicken strips into mayo mixture; Roll in cereal mixture to coat evenly.
  • Place on rack in shallow baking pan.
  • (I used a broiler rack on a pan, sprayed with cooking spray).
  • Bake 12-15 minutes or until strips are no longer pink in center.
  • Serve hot with your favorite dipping sauces.
  • My family likes bbq sauce, mixed with extra ketchup!
  • NOTE: I did end up making a little more of the mayonnaise mixture and, I had a lot of cereal mixture leftover, so don't be surprised if you do too; depending on how much chicken you end up doing--.

  1. My husband took one bite and said...UM!..this chicken is good! After eating he added that it actually deserved 5 1/2 stars!..You can see how much we liked this recipe. I followed directions except I did not bother to place on a rack. I just put into nonstick baking pan and baked. I did not turn over during cooking. One side was just a little browner than the other. I ate mine with a honey mustard sauce, and my husband ate the chicken plain. Wonderful recipe!
     
  2. Wonderful taste treats! I too used Miracle Whip as it was what I had on hand; gave the chicken a bit of tang. This was our Cookathon Dish in tribute to Silent Cricket. May your memory live on.

After being, "OzCoMartha" because of having lived for three years in Australia and then moving to Colorado, I have decided to "turn over a new leaf." I chose this name because many moons ago I used to be able to "chirp" like a cricket and the "silent" refers to the present time when I'm taking a break...But, perhaps after a season, however long I decide that needs to be, I may be back and then I will fill in more details about myself...
