Hot Sausage Links and Beans Casserole

ingredients
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 cup chopped onion
- 1 teaspoon dried oregano
- 1 tablespoon chopped fresh parsley
- 1⁄4 teaspoon salt
- 1⁄2 teaspoon ground black pepper
- 4 potatoes, cookd,peeled and cubed
- 1⁄2 lb spicy smoked pork sausage link, sliced
- 1⁄2 cup packed brown sugar
- 2 cups baked beans
- 1⁄4 cup barbecue sauce
- 1 cup shredded cheddar cheese
directions
- Preheat oven to 350*F (175*C).
- In a medum skillet, heat 1 TBS of the olive oil over medium heat.
- Add the garlic and cook for 30 seconds.
- Stir in the onion, oregano, parsley, salt and peppr.
- Cook for 1 minute and remove from the heat.
- Grease the bottom of an 8X8X2inch baking dish with the remaining TBS olive oil.
- On this layer the cubed cooked potatoes.
- Top the potatoes with the onion mixture.
- On the onion mixture, evenly distribute the sliced hot links.
- Ina small bowl, combine the brown sugar, baked beans and the barbecue sauce.
- Pour this evenly over the sausage.
- Top with the shredded Cheddar Cheese.
- Place in the pre-heated oven for 45 minutes.
- Serves 4.

I forgot to review this the first time we made it, two weeks ago, we have now made it twice, and it will be a regular family favourite! First time, I knew I would be late home from work, so I fished out this recipe and suggested to DH that he might like to try it, since it looked pretty straightforward, he could prepare and we could cook it off when I was on my way home........what a huge success!! Everyone loved it! So it is now DHs recipe, and we asked him if he would make it again last night, and he graciously obliged...... Since we had a friend staying for supper too, we added side dishes, brussel sprouts, and garlic mushrooms, and a loaf of crusty bread! Thanks MarieAlice for another winner!

This was a great, simple recipe. I added chopped bell pepper as well, but the vegetables still seemed like they were missing something. I didn't cook or peel the potatoes, just chopped them into about 1" cubes and they came out well. I realized halfway that I had completely run out of beans! So sadly I had to go through with the recipe without them. Next time, I'll have the beans for sure. (I'm looking forward to that!)

MarieAlice, loved this recipe. It was my first casserole ever. I used Hot and Spicy bbq sauce (that's all we eat)and I didn't have baked beans so I made my own using 2 small cans of pinto beans. I only used about a 1/2 c of the liquid from one can, but I should have used all of the juice from one can because the casserole was a little on the dry side but otherwise yummy. Will definitely try again. Think I will make some cornbread to eat with the leftovers. Thanks Again!
