Hp Sauce

"This is a clone for the famous English "Houses of Parliament" steak sauce & a must have recipe for all canadians living outside the country. I got it from a co-worker many years ago & haven't used the store-bought product since; however, I do keep my current supply in an old bottle for that authentic look (lol). If you prefer more of a bite, increase the tabasco!!"

  • Combine all ingredients in a dutch oven.
  • Bring to a boil, lower heat& cook, uncovered, for an hour, stirring occasionally.
  • Strain through a food mill& bottle in hot, sterilized jars.

  1. After reading the ingredients of HP sauce I added 1 cup pitted dates and 1 Tblspoon Tamarind puree. I also added half as much again of worcestershire sauce. A nice sauce. my result was lighter in colour and less like the original than expected, and the taste of allspice was dominant. Perhaps I should have cooked it longer? Next time I intend to use malt vinegar, probably more of it, even more worcestershire sauce and some ginger, nutmeg and cayenne. Will let you know how it goes!
     
  2. I followed this recipe exactly and it tastes nothing like HP Sauce, and that is comparing it to the actual bottle of HP Sauce. There is an overriding taste of tomatoes. Also, the recipes did not call for any dates and that is clearly in HP Sauce. I will admit it looks like HP Sauce but the taste tomatoes is too strong. My 4-year-old son said he could smell ketchup when he came in.
     
  3. A very good sauce which I find is great also as a dipping sauce! Easy to make. I was liberal with the hot sauce and am glad, it's intensely hot the way I like it. I strained it using a wire mesh strainer, bottled it (in empty HP sauce bottles of course), and am keeping it in the fridge. My batch yielded about 3 cups. I'm delighted to find this recipe, thank you, country lady!
     
  4. Just in case you are vegetarian/vegan. Worcestershire Sauce contains anchovies. This is a nice sauce but really not a substitute for the real HP Sauce which, incidentally, is vegetarian so clearly doesn't contain Worcestershire Sauce either.
     
  5. This sounds really good and enables concerned people to avoid HFCS or the similar glucose-fructose HP uses. My QUESTIONS: Am I correct in assuming this should be refrigerated, how long will this keep and can it be processed with a water bath to give it some shelf life for gift giving?.

In the words of Tracy Byrd, "I'm from the country & I like it that way"!! On May 1, 2008 my husband and I started a new adventure. We'll be living in a 37 foot RV while our new home is under construction. Its out in the country on a dead end dirt road with lots of trees. For the next 4 months or so, most meals will be cooked on the BBQ and life will be full of challenges! We love spending quality time with our friends & family - especially the grandkids!! The photo is 4 generations - my 84 year old mother, myself, my daughter & my youngest granddaughter - taken at the end of 2006. I've participated in many contests & events here on Zaar but this is the first banner that I've posted.
