  • Heat oven to 350. Grease pie plate. Beat all ingredients until smooth, 30 seconds in blender on high or 1 minute w/ hand blender. Pour into pie plate. Bake for 40-45 minutes. Cool 5 minutes. ENJOY!

  1. we love coconut so I doubled the coconut in the batter and sprinkled a couple more Tbsp on top as well.
     
  2. Good old fashioned comfort food! This pie was meant to be sweet, and it is. I sliced off thin pieces and enjoyed. After sitting overnight it gets better and is not as sweet. I like it because it doesn't need a crust, other than the thin one that the pie makes while cooking.
     
  3. As others noted, it was too sweet and more of a custard, even with the unsweetened coconut that I used. However, quick, easy and a good family dessert or for a sweet tooth. Yes, adding nuts and cinnamon, etc. seemed to improve it.
     
  4. This was amazingly good for such a simple recipe, although I can't say that mine really made a crust, more like a custard. I thought that it was bit too sweet, but maybe I added too much sugar. I think that it would be good with a little crumbled almond paste.
     
  5. I love this recipe. I made it just the way it is written once, then the second time I added 1/4 c of dutch process cocoa to the dry ingredients, then substituted about 1/3 c of toasted slivered almonds for the coconut. YUMMY!! Very nice and gooey and chocolatey!
