  • Mix and combine all ingredients.
  • Pour into non-stick skillet and when you shake the pan and the pancake moves, it's time to flip.
  • Brown on both sides, and enjoy!
  • (I also add about 1/4 cup of sugar-free maple syrup).

  1. I made these as directed, using one whole egg instead of Egg Beaters, and I added a teaspoon of peanut butter and chocolate chips--which were great additions. My only problem with these pancakes were that they were very dry! I will add milk (or almond milk) next time I make these!
     
  2. I made these tonight and I thought they were good. I used Maple and brown sugar oatmeal, didn't have a banana, but added the egg beaters, cinnamon and vanilla and it was plenty sweet! I'm definatly going to make these again using different flavored oatmeal. Thanks for posting this recipe!
     
  3. I made these as directed (except 1 whole egg instead of Egg Beaters) the first time with a Maple Brown Sugar Oatmeal packet and they were delicious. I'm not the best pancake maker, one side always gets too dark, so I tried making it into muffins the second time. I doubled the recipe (I have two kids) and sprayed my regular sized muffin tin with nonstick spray, then divided the mixture into 12 equal muffins. The batter was only about 1/4 to 1/2 inch thick in each cup. I baked them at 350f for about 15-18 minutes when the tops sprung back. These were crazy good and the kids (ages 6 and 7) loved getting 6 muffins each. What's not to like when your kids consume a packet of oatmeal, 1/2 a banana and an egg for breakfast. BTW, I used a whole egg instead of the Egg Beaters because I didn't have any.
     
  4. I was really excited to try this recipe, and I wasn't disappointed by the results! What an interesting and easy spin on instant oatmeal. I used apple-cinnamon flavored oatmeal and one regular egg instead of the Egg Beaters. It turned out great! If you're using already sweetened oatmeal, you really don't need any syrup unless you have a serious sweet tooth. I just put a little butter on top, and it was perfect! My kids (age 4 and 6) also loved this. Made for PAC Spring 2010.
