Irish Potatoes and Cabbage

- 4 tablespoons margarine or 4 tablespoons butter
- 2 cups leftover Coleslaw or 2 cups cabbage
- 3⁄4 cup milk
- 1⁄2 teaspoon salt
- 1⁄2 teaspoon pepper
- 6 red potatoes (or whatever you use for mashed potatoes, even instant ones work)
- 2 cups cooked corned beef, chopped (about 2 cups)
- 2 ounces shredded cheddar cheese
directions
- Wash and chop up you potatoes small and boil in a large pot. Once they are tender, drain and return to pot.
- Mash potatoes with a potato masher. Add butter and fold in, then milk, salt and pepper.
- Once you get them to the consistency that you like, add in your leftover cole slaw, corned beef and cheese; mix well.
