- 1 lb italian ground sausage
- 1⁄2 large onion, chopped
- 1 jalapeno pepper
- 1 green bell pepper
- 1 red bell pepper
- 1 cup shredded mozzarella cheese
- 1⁄2 cup shredded monterey jack cheese
- 1⁄2 cup enchilada sauce
- 1 cup salsa
- 8 ounces tomato sauce
- 8 corn tortillas
- 4 ounces ortega green chilies
directions
- Spray large casserole dish with non-stick spray.
- In a blender combine tomato sauce, salsa, ortega chiles, and enchilada sauce and puree until smooth.
- take a ladle of sauce mixture place on bottom of dish.
- cut 4 corn tortillas in half and place them on top of sauce mixture.
- chop red and green bell peppers, jalapeño pepper, onion.
- saute and cook peppers, onions, and italian sausage together until cooked and brown.
- place sausage, onion, and peppers on top of corn tortillas in casserole dish.
- cut 4 more corn tortillas in half and place on top of sausage, peppers, and onions mixture.
- add another ladle of sauce mixture on top of tortillas.
- mix monterey jack and mozzarella cheese together and then distribute on top of sauce mixture.
- bake at 350 for 40 minutes.
