  • Spray large casserole dish with non-stick spray.
  • In a blender combine tomato sauce, salsa, ortega chiles, and enchilada sauce and puree until smooth.
  • take a ladle of sauce mixture place on bottom of dish.
  • cut 4 corn tortillas in half and place them on top of sauce mixture.
  • chop red and green bell peppers, jalapeño pepper, onion.
  • saute and cook peppers, onions, and italian sausage together until cooked and brown.
  • place sausage, onion, and peppers on top of corn tortillas in casserole dish.
  • cut 4 more corn tortillas in half and place on top of sausage, peppers, and onions mixture.
  • add another ladle of sauce mixture on top of tortillas.
  • mix monterey jack and mozzarella cheese together and then distribute on top of sauce mixture.
  • bake at 350 for 40 minutes.
