Italian Sausage, Pepper and Potato Meal

"This dish has always been a staple in my very Italian family. It is quick and easy, and great for breakfast, lunch or dinner. My grandmother used to make it for my mom when she was little, as did my mother for me and now me for my son! I usually like to serve this dish for dinner, with the links stuffed into rolls and the rest of the mixture piled on top of the links, but I have also used it for breakfast as well. Usually when I serve it for breakfast I slice the sausage into wheels. I hope you enjoy it as much as my family has."

  • On medium heat, sautee garlic and onions in the olive oil until onions start to carmelize. (Be careful not to burn the garlic).
  • After the onions are carmelized, add the sliced potatoes and sautee until cooked through. (About 5-10 minutes. Be sure to add more oil as needed so that potatoes do not stick in the pan. A non stick pan can be used as well).
  • When potatoes are almost cooked, add the sliced bell peppers and cook until tender.
  • Add the beaten eggs to the pan and "scramble" the eggs, making sure to cook thoroughly, mixing in with the pepper- potato mixture.
  • Add the sausage links and cook until no longer pink. (5-10 minutes).
  • If desired sprinkle with cheese before serving.
  • Ingredients can be deleted or added according to tastes or what is in the pantry. I have made this dish with/without the eggs or with/without the potatoes, etc.
