  • In lg skillet over med heat, brown sausage.
  • Add wine, oil, onions and garlic; cook 5 minutes.
  • Add basil, oregano, red pepper flakes, both cans of tomatoes, and potatoes.
  • Bring to a boil.
  • Reduce heat, cover and simmer for 20 minutes.
  • Stir in parsley and salt.

  3. This is a great stew to make during the week. It's quick, easy, tasty, and has ingredients readily available in most pantries. I used Zesty Italian Sausage links and sliced them on the bias instead of crumbling and browning, but that's just a personal preference thing. The diced and stewed tomatoes I bought were already seasoned Italian style, and I think they really complimented the stew. There were no leftovers at all.
     
  4. This is a great, simple recipe for a cold evening. I loved the potatoes; a can of white beans would have made a nice addition, too. I used my own homemade Italian sausage which has lots of wine and cheese and very little fat. With commercial sausage, I would have been careful to thoroughly drain the sausage after browning. A bit of freshly grated Parmesan was a nice finishing touch.
     
  5. The recipe was very tasty, but I expected more of a stew, and, made as directed,it was more like a wonderful spaghetti sauce (lose the potatoes, and it is!). The next time we make it, we plan to add beef broth and just the one can of diced tomatoes. Don't get me wrong - the flavor was very nice, it just wasn't quite what we expected. And I love the idea of a sausage stew - it'd never occurred to me to make a stew with sausage, so we'll be tinkering around with the basics - thanks for the very good basic recipe.

After DH and I moved away from the farm, and to the city...I haven't done as much cooking and very little canning. But I do come to Zaar and look for new recipes once in a while. I'm still cooking Zaar!! I like to play at Facebook, with my family and friends. A lot of my Zaar friends are there!! Yay! It's a good way to keep in touch. We travel more. We're looking at the European trips now. Hope to go in the springtime. I really want to see London, I think I lived there in a past life, I've been obsessed with it since I was 10 years old!!
