  • Cook pasta in boiling water until al dente.
  • Meanwhile, heat olive oil in a large skillet over medium high heat. Cut chicken into 1 inch cubes and add to skillet along with onions. Cook until chicken is browned on all sides and onions are softened. Add tomatoes and reduce heat to medium-low. Gently mash tomato pieces with a spoon or fork to break them up slightly. Simmer 5-10 minutes while pasta finishes cooking.
  • Combine chicken mixture with drained pasta and sprinkle with fresh parsley.
