"Easy homemade soup after a busy day. The Italian seasoning gives it a wonderful flavor. I like to eat it with croutons in the soup or served with a crusty bread."

  • In a large saucepan, combined the first nine ingredients.
  • Bring to a boil.
  • Reduce heat; cover and simmer for 15-20 minutes or until vegetables are crisp-tender.
  • Add the pasta and tomatoes; heat through.
  • Discard bay leaf before serving.

  1. Really superb- tasty, healthy, fast! I made a double-batch today to go with my lunches this week. Ready in less than 30 minutes- I can't wait to make this all fall/winter long-what a great, filling addition to my diet! I made one change out of necessity, I found I had 1/2 of a large can of garlic/onion spaghetti sauce leftover from an earlier meal, so I threw that in the pot instead of the diced tomatoes. Really glad I did, added a nice, rich color and a well-seasoned taste. I'll do that next time as! Thanks Anissa!

  3. I really liked this and so did my daughter. Throw it all in a pot and cook it - so easy. I actually added the potatoes in later so they wouldn't get too mushy. I did have to add salt.
     
  4. This was an amazing, simple soup. Even my carnivore husband enjoyed it! I am a vegetarian & am grateful for recipes that we both enjoy. I didn't use the potato: used carrots, peas & corn. I used low sodium veggie broth & while I love broth--I'll reduce it down to 3 cups next time. After adding the tomatoes (used Italian seas), there was plenty of liquid. I used whole wheat elbows & really bumped off the seasonings: oregano, garlic, basic, Mrs Dash garlic/herb. I simmered an additional 10-12 min after adding the tomatoes/pasta to meld flavors. Thanks for sharing such an amazing recipe :-)
     
  5. This is delicious, nice flavour and very easy and quick to make. The only modification was replacing the peas with fresh green beans. Loved it!

Hi! My husband, four children and I live in NY. I think my love of cooking and eating?is in my blood. My Grandma (who was 100% Norweigan) was a wonderful cook and my mom & sisters are as well. I really enjoy baking the most. If I had some time off I would bake and look for more new recipes to try!
