  • Heat oven to 350 degrees.
  • Cut pumpkin into quarters, remove seeds and fibers. Cut the flesh from the rind and then dice the flesh.
  • Place in an ovenproof casserole, add garlic and toss with olive oil.
  • Bake, turning pumpkin mixture with a spatula occasionally until pumpkin meat is soft and golden, about 30-45 minutes. Let cool.
  • I serve the salsa in a hollowed out pumpkin. Remove the garlic cloves from the pumpkin mixture. Add the rest of the ingredients, stirring well and let chill at least 1 hour. Serve with tortilla chips.
