  • Preheat oven to 350 degrees.
  • Grease a 10 inch cast iron skillet with bacon grease or fat of your choice.
  • Mix dry ingredients and mix in jalapenos.
  • In a another bowl mix together eggs, sour cream, oil and corn.
  • Combine wet and dry ingredients.
  • Pour 1/2 of batter in the skillet and top with 1/2 of grated cheese.
  • Cover with remainder of batter and top with cheese.
  • Bake for approximately 35 minutes or until golden brown and set.
  • Serve hot with butter.
