- 4 cups water
- 1⁄2 teaspoon salt
- 1 cup fine yellow cornmeal
- 1 tablespoon flour
- 1 cup milk (or soy milk)
- 1 teaspoon vanilla extract
- 1⁄4 teaspoon cinnamon
- 2 tablespoons condensed milk
directions
- Bring salted water to a boil.
- Combine cornmeal and flour together in a bowl.
- Add milk slowly to make a smooth paste.
- Stir cornmeal paste into boiling salted water.
- Cover and cook on low heat for 15 minutes.
- Stir in vanilla, cinnamon, cover and simmer for 15 more minutes.
- Sweeten with condensed milk.
- Serve hot.

Just tried it as I haven't made porridge in a long time....it turned out delicious!!!! Traditional porridge doesn't call for flour (which I know ) but tried nevertheless and it added another smooth layer it really didn't take anything away from the outcome....simply delicious thanks for sharing!!!!!

I respect your recipe and I tried it tonight. I used coconut milk but I will try with condensed milk next time. I also respect Ms. Amanda L.'s observation because I don't think I've seen a Jamaican conrmeal porridge recipe using flour. And I doubt that my mother prepared hers with flour. But I understand that it acts as an added thickening agent and I like my porridge thick!

Mmm, not bad, this is nice for something different for brekky, I scaled it down to serve one and used cinnamon extract instead of cinnamon & vanilla, it was a little bland after tasting so I added a little more extract & condensed milk after serving which was great, even toddler DD had a taste and liked it. Thanks for a new breakfast recipe as an alternative to oats based porridge.
