  1. traditional Jamaican cornmeal porridge does not call for flour

  2. Just tried it as I haven't made porridge in a long time....it turned out delicious!!!! Traditional porridge doesn't call for flour (which I know ) but tried nevertheless and it added another smooth layer it really didn't take anything away from the outcome....simply delicious thanks for sharing!!!!!

  3. I respect your recipe and I tried it tonight. I used coconut milk but I will try with condensed milk next time. I also respect Ms. Amanda L.'s observation because I don't think I've seen a Jamaican conrmeal porridge recipe using flour. And I doubt that my mother prepared hers with flour. But I understand that it acts as an added thickening agent and I like my porridge thick!

  4. No flour required. I use coconut milk. Slap somebody good

  5. To avoid lumps you have to stir while adding the cornmeal in the salted boil water. stir until it starts thickening , then you stop stirring and add the spices and then sweeten. I make this twice a a week for my baby. I don't add flour though.

Tweaks

  1. Substitute coconut milk and a sweetener for the condensed milk. That's what I did.

  2. Mmm, not bad, this is nice for something different for brekky, I scaled it down to serve one and used cinnamon extract instead of cinnamon & vanilla, it was a little bland after tasting so I added a little more extract & condensed milk after serving which was great, even toddler DD had a taste and liked it. Thanks for a new breakfast recipe as an alternative to oats based porridge.
