ingredients

  • 1 lb jimmy dean hot and spicy sausage, cooked, crumbled and drained (recipe calls for regular flavor)
  • 3 medium baking potatoes, baked, peeled and cut into 1 inch cubes
  • 14 cup butter
  • 12 cup onion, chopped
  • 14 cup all-purpose flour
  • 3 cups chicken broth
  • 14 teaspoon thyme (recipe calls for 1 Tablespoon fresh thyme)
  • 2 cups milk (I used 2%)
  • 1 cup half-and-half (recipes calls for 3 cups milk instead of 1 cup half and half)
  • 34 cup parmesan cheese
  • salt and pepper

directions

  • Melt butter in a large saucepan over medium heat.
  • Add onions; saute until tender.
  • Stir in flour; cook 1 minute, stirring constantly.
  • Gradually stir in chicken broth; bring to a boil; stirring frequently, until thickened and smooth.
  • Stir in milk, cream, thyme, sausage and potatoes. Bring to a boil, reduce heat and simmer uncovered for 15 minutes.
  • Stir in Parmesan Cheese. Serve hot.

  1. Best soup I've ever made. I didn't have enough milk, so I used 2 cups of milk and 1 cup of heavy cream. This is the perfect soup.
     
  2. Very good. As if you were eating thin sausage gravy and the potatoes serve as the biscuits. Nothing wrong with that!
     
  3. I've made this a dozen times, at least! Wonderful comfort food! I am, typically, more likely to have Heavy Cream rather than half/half. I've used both and noticed no difference. I also omit thyme just because I do not like thyme. Always receive compliments on this dish!

How do U think this sausage potato soup will freeze?, I have heard that some potato soups are not the same when taken from the freeze >< I want to make a Potato soup and bring it to a couple that are having some Health problem, and cant do much cooking, I am hoping they can freeze the left overs for a couple extra meals

Tweaks

  1. I tweaked because I whiffed. Thought I had taken breakfast sausage out of the freezer, but nope, it was Italian sausage. So I subbed Italian seasoning for the thyme. Worked out great!

I will not give a 1 or 2 rating as I know that the chefs that took time to enter the recipe felt it was deserving to share.
