Kake Brod (Swedish Flat Bread)

  • Sprinkle yeast on warm water. Add honey and set aside. In large bowl, mix warm milk, salt, butter and 2 cups of flour. Beat with mixer or wooden spoon until smooth. Gradually add rest of flour. Turn onto floured board and knead until all the flour is used and dough is not sticky. Invert bowl over dough and let rest 10 minutes.
  • Knead 8 to 10 minutes until smooth and elastic. Return dough to bowl and let rise about 1 hour. Punch down, divide in 2 parts. Butter 2 round pizza pans or cookie sheets. Roll dough to fit pans. Place in pans and press the edges with fingers to make it fit the pan. Prick all over with a fork.
  • Cover with damp cloth and let rise until doubled in thickness, about 30 minutes. Bake in a 350 degree oven for about 10 to 15 minutes until golden brown. Butter the top generously with melted butter as soon as it is removed from the oven. Cool slightly on a wire rack before serving.

  1. I'm so glad to find this recipe. I have been working from an old family recipe that came with my<br/>grandmother from Sweden and now I know the exact portions. It was also beneficial to have<br/>the photo to compare with what I have been taught through the generations. Very helpful.
     
  2. This is a very nice bread! I added the yeast mixture to the warm milk/flour mixture and proceded as directed. I would oil the bowl used to rise the dough next time as the dough stuck a bit. It didn't harm the final outcome, however. Also, possible because I didn't stretch the dough enough (didn't fill the whole pizza pan), it took 25 minutes to bake.I'll be making this again. Made for ZWT6 Seasoned Sailor and his Sassy Sirens.
     
  3. Nice recipe, but you do need to know to add the yeast mixture to the flour AFTER mixing in 2 cups. THEN, add the rest of the flour. PLUS, 1 1/4 OUNCES of yeast is equal to about 10-12 teaspoons. Not good for flat bread. Use, instead, one packet of dry yeast (1 1/4 tsps roughly) This recipe is incorrectly printed at several sites without the correct information.
