- 1 cup butter, melted
- 1⁄2 cup granulated sugar
- 1⁄2 cup brown sugar
- 1 teaspoon vanilla
- 2 eggs
- 1⁄2 cup flour
- 1⁄2 cup pecans
- 1 cup chocolate chips
- 1 (9 inch) unbaked pie shells
directions
- Preheat oven to 350 degrees.
- Cream the butter and sugars with an electric mixer. Add the vanilla, eggs and flour and mix well. Stir in chocolate chips and pecans, and pour into an unbaked pie crust.
- Bake for 45 and bask in the compliments. No one will ever guess how easy that was!

Clear five stars - I can't compare because I never had Kentucky pie before, but this one was extremely addictive! I used a gluten free pie crust and used erythritol instead of the granulated sugar to have less sugar. For the flour I used a mix of 1/3 arrowroot starch and 2/3 white rice flour, and it worked like a charm. As there was no direction about the choc chips, I used 85 percent chocolate, and it turned out soooo goood!!! You're right, you'd never guess how easy this fantastic pie is! As my name suggests, I am a part-time hobbit, escaping to my quiet life in the Shire whenever I can.
In reality, I am a busy student who uses cooking as therapy. I am severely gluten intolerant and mildly dairy intolerant, so most of the recipes I post/comment on will be compatible with my dietary restrictions.
