Kentucky Derby Dessert

"While there are a couple of other recipes for Kentucky Derby Day pies on this site, there wasn't one exactly like the one I grew up eating. And when something is as perfect as this pie, you want the exact recipe. Trust me."

  1. How long do you wait before you cut it? Also, It was still gooey inside even though I cooked it an extra 8 mins.

  2. Hi! Do you use semi-sweet or milk chocolate chocolate chips?

  1. I love this but the original Ky Derby pie was and still is made with walnuts, not pecans. Walnut trees are found in Ky, so that makes sense. Kerns bakery holds the trademark on Derby pie and uses walnuts. However, I am as Ky as it gets and I prefer pecans with my Maker's Mark. Enjoy.

  2. This pie is as original as it gets. There are other versions, but this is the one I have been eating for over sixty years here in Louisville.

Tweaks

  1. Nuts

  2. Clear five stars - I can't compare because I never had Kentucky pie before, but this one was extremely addictive! I used a gluten free pie crust and used erythritol instead of the granulated sugar to have less sugar. For the flour I used a mix of 1/3 arrowroot starch and 2/3 white rice flour, and it worked like a charm. As there was no direction about the choc chips, I used 85 percent chocolate, and it turned out soooo goood!!! You're right, you'd never guess how easy this fantastic pie is! Thanks for posting.<br/>Made for PAC Spring 2011.

As my name suggests, I am a part-time hobbit, escaping to my quiet life in the Shire whenever I can. In reality, I am a busy student who uses cooking as therapy. I am severely gluten intolerant and mildly dairy intolerant, so most of the recipes I post/comment on will be compatible with my dietary restrictions. Still, I love to eat, and have learned that you don't have to sacrifice flavor and personality when you go gluten and dairy free. I tend to like recipes that are either real homey comfort food, or transport me to the places I've travelled to, or would like to someday visit. I believe in eating organic, ethically raised meat and vegetables. I like to stay as close to nature as possible, eating mostly whole foods.
