  • Add oil and butter to heated pan.
  • Add onions, celery, and sausage and stir fry for 3-5 minutes.
  • Add garlic and cook for another minute.
  • Add thyme, basil, oregano, allspice, pepper, salt, sage, chili powder and cayenne pepper and thoroughly mix with vegetables.
  • Mix in rice and cook until rice begins to turn white.
  • Pour in the canned tomatoes, beef broth, and red wine; stir well.
  • Add chicken and cover.
  • Simmer for 15 minutes and then stir in okra and green onions.
  • Cook for an additional 5-10 minutes.
  • Remove from heat and let rest for at least 10 minutes (keep covered).
  • Serve with crusty bread and enjoy.
